Apple Pie with Oatmeal

Apple Pie with Oatmeal


 "The crunchy oat topping adds an extra dimension to this delicious apple pie. Try using Golden Delicious,  Jonagold, or Granny Smith apples for this pie."

Ingredients 
Original recipe makes 1 pie

  •  1 (9 inch) pie shell 
  •  5 cups apples - peeled, cored and sliced 
  •  2 tablespoons all-purpose flour 
  •  2/3 cup white sugar
  •  1/2 teaspoon ground cinnamon 
  •  1/4 teaspoon ground nutmeg
  •  1/4 teaspoon ground allspice 
  •  2 tablespoons butter
  •  3/4 cup all-purpose flour 
  •  1/2 teaspoon ground cinnamon 
  •  1/2 cup packed brown sugar 
  •  3/4 cup rolled oats 
  •  1 teaspoon lemon zest 
  •  1/2 cup butter

 Directions 

  1. Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.
  2. To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.
  3. Remove pie shell from freezer. Place apple mixture in pie shell and dot with 2 tablespoons butter or margarine. Lay a sheet of aluminum foil lightly on top of filling, but do not seal.
  4. Bake in preheated oven for 10 minutes.
  5. While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, oats, and lemon peel. Mix thoroughly, then cut in 1/2 cup butter or margarine until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.
  6. Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.

Brownie Caramel Cheesecake

Ingredients 
Original recipe makes 1 - 9 inch springform pan

  •  1 (9 ounce) package brownie mix
  •  1 egg 
  •  1 tablespoon cold water 
  •  1 (14 ounce) package individually wrapped caramels, unwrapped
  •  1 (5 ounce) can evaporated milk
  •  2 (8 ounce) packages cream cheese, softened 
  •  1/2 cup white sugar 
  •  1 teaspoon vanilla extract 
  •  2 eggs 
  •  1 cup chocolate fudge topping 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 9 inch springform pan. 
  2. In a small bowl, mix together brownie mix, 1 egg and water. Spread into the greased pan. Bake for 25 minutes.
  3. Melt the caramels with the evaporated milk over low heat in a heavy saucepan. Stir often, and heat until mixture has a smooth consistency. Reserve 1/3 cup of this caramel mixture, and pour the remainder over the warm, baked brownie crust.
  4. In a large bowl, beat the cream cheese, sugar and vanilla with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Pour cream cheese mixture over caramel mixture.
  5. Bake cheesecake for 40 minutes. Chill in pan. When cake is thoroughly chilled, loosen by running a knife around the edge, and then remove the rim of the pan. Heat reserved caramel mixture, and spoon over cheesecake. Drizzle with the chocolate topping.

 "Easy and creamy chocolate fudge frosting. Tastes heavenly. Use on cooled devil's food cake for a death by  chocolate experience."

Ingredients 
Original recipe makes 3 cups

  •  1/2 cup butter
  •  1/4 cup shortening 
  •  1/3 cup unsweetened cocoa powder 
  •  2 cups confectioners' sugar 
  •  2 tablespoons milk
  •  1 cup hot fudge topping 
  •  1 teaspoon vanilla extract 

Directions

  1. Cream together the butter or margarine with the shortening. 
  2. Sift the cocoa with the confectioners' sugar and add to the creamed mixture. Mix together adding 1 tablespoon at a time of milk to keep mixture smooth. Don't add more than 1/4 cup of milk. 
  3. Add the hot fudge topping and the vanilla extract. Blend until smooth and creamy.

Mandarin Orange Cake

Original recipe makes 1 - 9x13 inch cake 

  •  1 (18.25 ounce) package yellow cake mix 
  •  4 eggs 
  •  1 cup vegetable oil 
  •  1 (11 ounce) can mandarin orange segments 
  •  1 (8 ounce) container frozen whipped topping, thawed 
  •  1 (20 ounce) can crushed pineapple with juice 
  •  1 (3.5 ounce) package instant vanilla pudding mix

 Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
  3. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. 
  4. To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

  •  2 cups all-purpose flour 
  •  2 cups white sugar
  •  1 teaspoon baking soda 
  •  1/2 teaspoon salt 
  •  1/2 cup sour cream 
  •  2 eggs
  •  1 cup butter 
  •  1 cup water 
  •  5 tablespoons unsweetened cocoa powder 
  •  6 tablespoons milk
  •  5 tablespoons unsweetened cocoa powder
  •  1/2 cup butter 
  •  4 cups confectioners' sugar
  •  1 teaspoon vanilla extract 
  •  1 cup chopped walnuts (optional) 

Directions 

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch pan. 
  2. Combine the flour, sugar, baking soda and salt. Beat in the sour cream and eggs. Set aside. Melt the butter on low in a saucepan, add the water and 5 tablespoons cocoa. Bring mixture to a boil then remove from heat. Allow to cool slightly, then stir cocoa mixture into the egg mixture, mixing until blended. 
  3. Pour batter into prepared pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
  4. For the icing: In a large saucepan, combine the milk, 5 tablespoons cocoa and 1/2 cup butter. Bring to a boil, then remove from heat. Stir in the confectioners' sugar and vanilla, then fold in the nuts, mixing until blended. Spread frosting over warm cake.

  •  3/4 cup butter, softened 
  •  3/4 cup white sugar 
  •  3/4 cup packed brown sugar 
  •  2 eggs 
  •  1 teaspoon vanilla extract 
  •  1 1/4 cups all-purpose flour 
  •  1 teaspoon baking soda
  •  1/2 teaspoon ground cinnamon 
  •  1/2 teaspoon salt
  •  3 cups rolled oats
  •  1 2/3 cups butterscotch chips

 Directions 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well. 
  3. Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet. 
  4. Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

 Ingredients 
 Original recipe makes 2 dozen 

  •  1 1/2 cups graham cracker crumbs 
  •  1/2 cup margarine, melted 
  •  1 cup chopped walnuts
  •  3/4 cup semisweet chocolate chips 
  •  3/4 cup butterscotch chips 
  •  1 1/2 cups flaked coconut 
  •  1 1/3 cups sweetened condensed milk 

Directions 

  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. In a 9 x 13 inch pan pour in melted margarine. Sprinkle the graham cracker crumbs evenly over the margarine. Next place the chopped nuts over the crumbs, and spread the chocolate and butterscotch chips over the nuts. Add the coconut over all, and pour the milk evenly over the top.
  3. Bake 25 to 30 minutes or until lightly brown on top. Cool at least 20 minutes then cut into desired sized bars

  •  3 cups all-purpose flour 
  •  1/4 teaspoon baking soda 
  •  1/2 teaspoon salt 
  •  1 cup butter 
  •  3 cups white sugar 
  •  6 eggs 
  •  1 teaspoon lemon extract
  •  1 teaspoon vanilla extract 
  •  1 cup buttermilk 

Directions 

  1. Preheat oven to 325 degrees F (165 degrees C). Grease one 9 or 10 inch tube pan. Mix together the flour, baking soda, and salt. Set aside.
  2. In a large bowl, beat butter with sugar. Mix in the eggs, one at time, beating well after each addition. Stir in the lemon and the vanilla extracts. Gently mix in flour mixture alternately with the buttermilk. Pour batter into the prepared pan. 
  3. Bake in preheated oven for 90 minutes. Do not OPENoven door until after one hour. When cake begins to pull away from the side of the pan it is done. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

 Ingredients 
 Original recipe makes 4 Servings 

  •  1 (10 ounce) package frozen sliced strawberries
  •  1/2 cup sugar 
  •  2/3 cup heavy cream

 Directions 

  1. Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

  •  2 cups all-purpose flour 
  •  2 cups white sugar 
  •  3/4 cup unsweetened cocoa powder
  •  2 teaspoons baking soda 
  •  1 teaspoon baking powder 
  •  1/2 teaspoon salt 
  •  1 teaspoon ground cinnamon 
  •  4 eggs 
  •  1 1/2 cups vegetable oil 
  •  3 cups grated zucchini 
  •  3/4 cup chopped walnuts

 Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
  3. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

  •  6 apples - peeled, cored and sliced 
  •  1/2 cup white sugar 
  •  3 tablespoons all-purpose flour 
  •  1/2 teaspoon ground cinnamon 
  •  1/2 teaspoon ground nutmeg 
  •  1/4 teaspoon ground cloves 
  •  1/2 cup raisins 
  •  1/2 cup chopped walnuts 
  •  1/2 cup whole milk 

Directions 

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray. 
  2. Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture. 
  3. Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

  •  1 cup butter, softened 
  •  3/4 cup white sugar

  •  2 eggs 
  •  2 1/4 cups all-purpose flour 
  •  1 teaspoon salt 
  •  1 teaspoon baking soda 
  •  2 cups semisweet chocolate chips 
  •  1 cup chopped walnuts

 Directions 

  1. In large bowl, beat butter, granulated sugar, brown sugar, and vanilla until light and fluffy. Add eggs, one at a time, beating well. 
  2. Gradually add flour, salt, and baking soda, beating until well blended. Stir in chocolate chips and nuts.
  3. Spread in greased 14 inch round pizza pan. Bake at 375 degrees F (190 degrees C) for 20-25 minutes. Cool cookie in pan on a cooling rack. Decorate as desired.
